Green chile stew recipe

chile stewThe most important men in my life all have one thing in common: they are, among other things, die hard green chile fans. Watching my dad, grandpa and my uncles at the dinner table anticipating the goodness that was green chile stew, sticks in my mind like a movie reel. As young girls my sister and I would try to hang in there with the heat, knowing it was surely in our blood, but usually passed our plates onto the guys and opted for something less spicy.

Now as I look back on the tastes and flavors that shaped my palate, this is definitely one of them. Roasted Hatch green chile is divine to those raised in the Southwest. I’ve also seen newbies get hooked- and give into the craving of the pungent, roasty, mild spice of New Mexico green chile. Read the rest of this entry »

Roasted Baby Dutch Yellow Potatoes, simply done

Tired of boring old baked taters? I think they are too big, so I end up piling on  butter and sour cream, thus ruining all nutritional goodness; I have said before that potatoes hate my ass and hips. However, I find if I make little ones that are packed with flavor, I will eat less.

And let me say these bad boys are D-E-L-I-S-H!! I guarantee ‘em.

This recipe will work with any baby potato.

Breakfast Week: Frittata — What a Dish

She was a smokin’ hot babe. Er… dish.
Savory egg filling. Legs a mile long. A real hot potato.
Er … filled with potato.
And herbs, cheese. A melt in your mouth kind of beauty.
She got me fueled up for the day, and we had that long, slow burn that just sticks with you.
I never went hungry when she was around.
I’m not the jealous type, either. But when she was on my plate … I finished every last bite. No point in sharing a dish this good.
Quiche? Not for a real man. But frittata?
Well, I’m no sexpert, but Rome could give Paris a run for its money romance-wise. And this Italian dish? Frittata? Always the way I want to start my day… Read the rest of this entry »

Hungry Housewife oven-baked potatoes

We don’t eat spuds that often in my house, quite frankly because my hips don’t like them.  I have food willpower issues, so I just avoid them like the plague! But on the rare occasion that I do make them, I don’t want mashed (even though I make MEAN mashed potatoes) and I don’t want boring old baked, cause those are no good without a whole stick of butter in them (again, not very ass friendly).
So, one night, I whipped these up. They are so very comforting, loaded with flavor and I don’t have to undo my pants button after eating them!
My measurements are usually done by sight, so I tried my best to duplicate it for you.
