Oatmeal Chocolate Chip Caramel Bars

The recipe comes from the back of the Betty Crocker Oatmeal Chocolate Chip cookie mix bag (yes, this not from scratch; it is semi-homemade. Shhh, don’t tell.) The most difficult part making these bars was unwrapping the 35 caramel candies — a tedious task. With all the caramel and chocolate, these bars go well with a tall glass of milk.
So, you will need:
1 bag Betty Crocker Oatmeal Chocolate Chip cookie mix
1 egg
1/2 cup butter or margarine, softened
35 caramels
1/4 cup milk
And then…
Preheat the oven to 375 degrees. Grease a 8×8 or 9×9 pan. (And grease WELL, these suckers are sticky.)
Stir together egg and butter. Stir in cookie mix (dough will be stiff). Reserve 1/2 cup of dough. Spread the rest of the dough in the pan.
Bake for 15-20 minutes until crust is golden brown. Meanwhile, microvave caramels and milk for 2-3 minutes on high, stirring after every minute.
Spread caramel mixture over crust. Drop reserved dough in blobs over the caramel. Bake again for 15-20 minutes. Cool completely before cutting.
